  • 1/2 cup cucumbers chopped
  • 1/4 cup red onion diced
  • 1/2 cup tomatoes chopped
  • 1/2 cup chickpeas drained & rinsed
  • 1/4 cup kalamata olives chopped
  • 2 tablespoons parsley chopped
  • 2 cups spinach
Dressing
  • 2 tablespoons hummus
  • 2 tablespoons balsamic vinegar

Method
 

  1. Simply combine chopped cucumbers, diced red onions, tomatoes, chickpeas, kalamata olives, parsley, and spinach.
